[日常生活] Spicy Chicken Tagine with Apricots

在Tesco買乾的Apricots的食譜,照著試做了一次,滋味很不賴,所以貼上來。

Spicy Chicken Tagine with Apricots

Serves 4

Preparation time: 10 mins
Cooking time: 35-40 mins

Ingredients:

2 tbsp olive oil
1 onion, finely chopped
2 sprigs rosemary, chopped
1 cinnamon stick
40g fresh ginger
1 red chilli, de-seeded and finely chopped
8 skinless and boneless chicken thighs
175g ready to eat apricots
2 tbsp clear honey
1x400g tin chopped tomatoes
salt and pepper

Method
1. Heat the oil in a tagine or large casserole dish
2. Add the onion, rosemary, ginger and chillies and cook for 5-6 minutes until the onions soften.
3. Add the chicken thighs and cinnamon stick and brown the chicken on both sides
4. Stir in the apricots, honey and chopped tomatoes. Bring to the boil then reduce the heat. Cover and simmer gently for 35-40 minutes. Season to taste.

Serve with coriander and lemon couscous or with wholemeal or white pitta bread.
